Old Fashioned Rice Pudding

Instructions

  1. In a medium saucepan, combine rice, milk, heavy cream, sugar, and salt.Stir everything together so the grains are fully submerged. A heavy-bottomed pot helps prevent scorching as the mixture thickens later.
  2. Bring to a gentle boil over medium heat, stirring often to prevent sticking.You should see slow bubbles along the edges. Frequent stirring keeps the milk from catching on the bottom and ensures even cooking.
  3. Reduce heat to low and simmer uncovered, stirring occasionally, until rice is tender and mixture thickens, about 40–45 minutes.The pudding should gradually transform from liquid to a creamy consistency. Stir more frequently toward the end, as it thickens quickly and can stick if left unattended.
