Instructions
- Cook the ground meat. In a large skillet, heat the olive oil or butter over medium heat. Add the ground meat and cook, breaking it apart with a spatula, until browned and fully cooked through. Drain any excess fat from the skillet.
- Sauté the vegetables. Add the chopped onion and minced garlic to the skillet with the cooked meat. Sauté for 3–5 minutes, until the onion is softened and fragrant.
- Cook the potatoes. Add the diced potatoes to the skillet, stirring to combine. Season with salt, pepper, paprika, and dried thyme. Continue to cook for about 10 minutes, stirring occasionally, until the potatoes begin to soften and take on a little color. If necessary, add a splash of water or broth to help the potatoes cook through.
- Add the cream and cheese. Pour in the heavy cream (or half-and-half) and bring the mixture to a simmer. Stir in the shredded cheese, allowing it to melt into the sauce, creating a rich and creamy coating for the meat and potatoes. Continue to simmer for another 5–7 minutes, or until the potatoes are tender and the sauce has thickened to your desired consistency.
- Garnish and serve. Taste the dish and adjust the seasoning with more salt, pepper, or thyme if needed. Sprinkle fresh parsley over the top for a pop of color, and serve the creamy meat and potato skillet warm with your favorite side dish or just on its own!
