Pan-Seared Mediterranean Cod in Tomato Basil Sauce

1. Prepare the Cod

  • Pat the cod fillets dry with paper towels.

  • Season both sides with salt and black pepper.

2. Sear the Cod

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

  • Add cod fillets and cook for 2–3 minutes per side, until lightly golden and just cooked through.

  • Transfer cod to a plate and cover loosely with foil.

3. Make the Tomato Basil Sauce

  • In the same skillet, add remaining 1 tablespoon olive oil.

  • Add the onion and sautΓ© for 3–4 minutes until softened.

  • Stir in the garlic and cook for 30 seconds.

  • Add the cherry tomatoes and optional red pepper flakes. Cook for 5–6 minutes, stirring occasionally, until the tomatoes begin to break down.

  • Pour in the broth or white wine, stir, and simmer for another 3 minutes to let flavors combine.
