1. Prepare the Cod

Pat the cod fillets dry with paper towels.

Season both sides with salt and black pepper.
2. Sear the Cod

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Add cod fillets and cook for 2β3 minutes per side, until lightly golden and just cooked through.

Transfer cod to a plate and cover loosely with foil.
3. Make the Tomato Basil Sauce

In the same skillet, add remaining 1 tablespoon olive oil.

Add the onion and sautΓ© for 3β4 minutes until softened.

Stir in the garlic and cook for 30 seconds.

Add the cherry tomatoes and optional red pepper flakes. Cook for 5β6 minutes, stirring occasionally, until the tomatoes begin to break down.

Pour in the broth or white wine, stir, and simmer for another 3 minutes to let flavors combine.
