Peanut Christmas Log with Caramel and Vanilla

  1. Place the sugar in a pan over medium heat and allow it to melt without stirring. Keep an eye on it to prevent burning.
  2. Once the sugar turns amber in color, add the butter and stir until melted and smooth.
  3. Gradually pour in the cream (it will bubble up, which is normal), stirring constantly until fully combined.
  4. Add 1 teaspoon of salt and mix well. Leave the caramel to cool to room temperature. The consistency should be smooth—not too runny or too thick.

✨ 3. Vanilla Cream

  1. Whip the cold cream in a bowl until it reaches semi-stiff peaks.
  2. Add the mascarpone or labneh, powdered sugar, and vanilla extract (or the seeds from the vanilla bean). Beat until fully combined and smooth.
  3. Finish by adding a pinch of salt to enhance the flavors of the cream. The mixture should be glossy and thick.

🎄 4. Assembling the Log

  1. Spread a thin layer of peanut butter over the chilled biscuit base. This layer will add flavor and prevent the filling from soaking into the crust.
  2. Drizzle a light layer of caramel sauce over the peanut butter layer for a rich, sweet touch.
  3. Pour half of the vanilla cream filling over the caramel and peanut butter layers, smoothing it out evenly.
  4. Sprinkle a generous amount of roasted peanuts over the cream filling to add a crunch element.
  5. Top with the remaining vanilla cream, smoothing it out to cover the entire log.
  6. Wrap the log with plastic wrap and refrigerate for at least 6 hours, preferably overnight, to allow the layers to set.

🍫 5. Top Ganache

  1. Heat the cream in a small saucepan (do not boil). Once warm, pour it over the finely chopped chocolate and let it sit for 1 minute to soften.
  2. After 1 minute, stir the mixture until smooth and fully combined.
  3. Add the butter and stir until the ganache is glossy and silky.
  4. Allow the ganache to cool slightly before pouring it over the chilled log from the refrigerator.

✨ 6. Decoration

  • For a festive touch, sprinkle peanut crumbs, caramel lines, chocolate pieces, and/or gold dust over the top of the ganache.
  • For a more elegant finish, you can also use gold sprinkles to give the log a shimmering effect.
  • Consider lightly sprinkling some extra salt on top to elevate the flavors and balance out the sweetness.
