Step 1: Prepare the Crust
- Preheat oven to 325°F (160°C). Lightly grease a 9-inch springform pan and line the bottom with parchment paper.
- In a medium bowl, mix graham cracker crumbs, sugar, and finely ground pistachios.
- Stir in melted butter until mixture resembles wet sand.
- Press evenly into the bottom of the springform pan. Use the bottom of a glass or measuring cup to compact firmly.
- Bake for 10 minutes. Remove and let cool while you prepare the filling.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat cream cheese until smooth and fluffy.
- Add sugar and continue beating until well combined.
- Beat in eggs, one at a time, scraping down the bowl after each addition.
- Add sour cream, vanilla, almond extract, and pistachio paste or ground pistachios. Mix until smooth.
- Stir in flour. Add a few drops of green food coloring, if desired, and mix just until combined.
