Pistachio Cheesecake – Creamy, Nutty & Elegantly Decadent

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (160°C). Lightly grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and finely ground pistachios.
  3. Stir in melted butter until mixture resembles wet sand.
  4. Press evenly into the bottom of the springform pan. Use the bottom of a glass or measuring cup to compact firmly.
  5. Bake for 10 minutes. Remove and let cool while you prepare the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese until smooth and fluffy.
  2. Add sugar and continue beating until well combined.
  3. Beat in eggs, one at a time, scraping down the bowl after each addition.
  4. Add sour cream, vanilla, almond extract, and pistachio paste or ground pistachios. Mix until smooth.
  5. Stir in flour. Add a few drops of green food coloring, if desired, and mix just until combined.
