Cook the Salmon
Season the salmon with salt and pepper. Heat 1/2 tbsp oil in a skillet over medium heat. Cook salmon skin-side down for 4β5 minutes, then flip and cook another 3β4 minutes or until opaque and flaky. Set aside.
SautΓ© the Veggies
In the same pan, add the remaining oil. SautΓ© mushrooms for 3β4 minutes until golden, then toss in spinach and cook until wilted. Season lightly with salt and pepper.
Fry the Egg
Crack an egg into the pan and cook to your preference (sunny-side up works great here). Sprinkle with salt and pepper.
Assemble the Plate
Arrange salmon, sautΓ©ed mushrooms and spinach, diced avocado, and fried egg on a plate. Finish with a drizzle of olive oil or a squeeze of lemon if desired.
