Step 1: Prepare the Cheesecake Filling
- In a medium bowl, beat together the cream cheese and sugar until smooth and creamy.
- Add the egg yolk and vanilla extract, mixing until fully incorporated and silky. Set aside while you prepare the cookie dough.
Step 2: Make the Cookie Dough
- In a separate bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream the butter with the brown sugar and granulated sugar until light and fluffy (about 2–3 minutes).
- Add the egg and vanilla extract, mixing well to combine.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips gently with a spatula.
Step 3: Assemble the Loaf
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper, allowing some overhang for easy removal later.
- Divide the cookie dough into several small portions — about the size of a golf ball.
- Press a few dough pieces into the bottom of the loaf pan to form a base layer. Add spoonfuls of the cheesecake filling on top, then cover with more cookie dough pieces.
- Continue layering until all the dough and cheesecake filling are used up, finishing with a layer of cookie dough on top. Don’t worry about being too precise — the rustic pull-apart texture is part of the charm!
