Sauté Aromatics
Heat oil in a medium saucepan over medium heat. Add sliced onions and sauté for 2–3 minutes until softened. -
Add Flavor Base
Stir in garlic, grated ginger, and red curry paste. Cook for 1–2 minutes until fragrant. -
Build the Broth
Pour in coconut milk and chicken broth. Stir to combine and bring to a simmer. -
Add Fillings
Add mushrooms, carrots, and shredded chicken. Simmer for 5 minutes to allow flavors to meld. -
Noodle Time
Add the ramen noodles and cook for 3–4 minutes, or until tender. -
Finish with Greens
Stir in soy sauce and lime juice. Add baby spinach and cook just until wilted. -
Serve
Ladle into bowls and garnish with fresh cilantro. Add green onions, chili oil, or lime wedges if desired.
