Red Curry Chicken Ramen

  1. Sauté Aromatics
    Heat oil in a medium saucepan over medium heat. Add sliced onions and sauté for 2–3 minutes until softened.

  2. Add Flavor Base
    Stir in garlic, grated ginger, and red curry paste. Cook for 1–2 minutes until fragrant.

  3. Build the Broth
    Pour in coconut milk and chicken broth. Stir to combine and bring to a simmer.

  4. Add Fillings
    Add mushrooms, carrots, and shredded chicken. Simmer for 5 minutes to allow flavors to meld.

  5. Noodle Time
    Add the ramen noodles and cook for 3–4 minutes, or until tender.

  6. Finish with Greens
    Stir in soy sauce and lime juice. Add baby spinach and cook just until wilted.

  7. Serve
    Ladle into bowls and garnish with fresh cilantro. Add green onions, chili oil, or lime wedges if desired.
