Red, White and Blue Poke Cake (Patriotic Jelly Dessert)

Instructions

1️⃣ Bake the Cake

  1. Preheat your oven to 350°F (175°C). Grease a standard 9×13 inch (23×33 cm) rectangular baking pan with butter, nonstick spray, or line with parchment for easy removal later.
  2. Prepare the vanilla cake mix according to the instructions on the box. Typically, this involves whisking together 3 large eggs, ½ cup of oil, and 1 cup of water with the dry cake mix. Mix until smooth and no lumps remain.
  3. Pour the batter evenly into the prepared pan. Use a spatula to level the surface.
  4. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean and the surface springs back when lightly pressed. Remove from the oven and let the cake cool completely in the pan before proceeding. A warm cake will melt the jelly and compromise the structure of the poke effect.

2️⃣ Poke Holes

  1. Once the cake has cooled completely, use the handle of a wooden spoon or a similar round utensil to poke holes into the cake. Space the holes about 1.5 cm (½ inch) apart across the entire surface. Make sure to poke deeply, nearly to the bottom of the cake, without tearing it.
  2. Prepare the red jelly by dissolving the contents of one box in 1 cup boiling water. Stir until fully dissolved, then add ½ cup cold water and mix again.
  3. Repeat the same process for the blue jelly in a separate bowl: combine jelly powder with 1 cup boiling water, stir, then add ½ cup cold water.
  4. Using a spoon, small ladle, or mini pitcher, gently pour the red and blue jelly mixtures into the holes you created. You can alternate between colors in rows or mix the two for a more abstract pattern. Aim to fill the holes generously while keeping the surface tidy.
