1️⃣ Prepare the Base
- Preheat your oven to 160°C (320°F).
- In a bowl, mix the graham cracker crumbs, melted butter, and optional sugar until evenly moistened.
- Press the mixture firmly into the base of a 9-inch springform pan lined with parchment paper. Use the bottom of a flat cup to smooth it evenly.
- Bake the crust for 10 minutes. Remove and let cool while preparing the filling.
2️⃣ Make the Raspberry Sauce
- In a small saucepan, combine raspberries, sugar, and lemon juice.
- Cook over medium heat until berries break down and the mixture begins to bubble (about 5–6 minutes).
- Stir in the cornstarch slurry and continue cooking for 2–3 more minutes until thickened.
- Remove from heat and let cool completely. Strain through a fine mesh sieve for a smooth sauce, if desired.
