Refreshing Lemon Raspberry Cheesecake – Zesty, Creamy & Swirled with Summer Flavor

🧑‍🍳 Preparation

1️⃣ Prepare the Base

  1. Preheat your oven to 160°C (320°F).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and optional sugar until evenly moistened.
  3. Press the mixture firmly into the base of a 9-inch springform pan lined with parchment paper. Use the bottom of a flat cup to smooth it evenly.
  4. Bake the crust for 10 minutes. Remove and let cool while preparing the filling.

2️⃣ Make the Raspberry Sauce

  1. In a small saucepan, combine raspberries, sugar, and lemon juice.
  2. Cook over medium heat until berries break down and the mixture begins to bubble (about 5–6 minutes).
  3. Stir in the cornstarch slurry and continue cooking for 2–3 more minutes until thickened.
  4. Remove from heat and let cool completely. Strain through a fine mesh sieve for a smooth sauce, if desired.
