1. Prepare the Ice Cream
- Allow the vanilla ice cream to soften slightly at room temperature for about 5-10 minutes, so it’s easier to spread.
2. Assemble the Sandwiches
- Place 12 Ritz crackers on a clean surface, bottom-side up.
- Generously scoop a heaping spoonful of vanilla ice cream onto each cracker.
- Top each with another Ritz cracker, pressing gently to form sandwiches. Be sure not to press too hard to avoid squishing the ice cream out of the sides.
3. Drizzle with Caramel
- Drizzle the salted caramel sauce over the ice cream sandwiches. You can drizzle on top or, for an extra touch, dip the sides of each sandwich in the caramel sauce for a thicker coating.
4. Freeze to Set
