Rotel Cream Cheese Sausage Balls

Ingredients

  • 1 pound ground sausage (hot or mild, depending on preference)
  • 8 ounces cream cheese, softened
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained well
  • 2 cups shredded cheddar cheese
  • 1½ cups Bisquick or another baking mix

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup. This will also help the sausage balls bake evenly and maintain their shape.
  2. Prepare the Sausage Mixture: In a large mixing bowl, combine 1 pound of raw sausage, 8 ounces of softened cream cheese, the drained 10-ounce can of Rotel, 2 cups shredded cheddar cheese, and 1½ cups Bisquick. Mix thoroughly using a spoon or your hands until all ingredients are evenly incorporated. Make sure the cream cheese and cheese are well distributed throughout the mixture for consistent flavor in each bite.
  3. Shape the Balls: Roll the mixture into approximately 1-inch balls using your hands. Place the formed sausage balls on the prepared baking sheet, spacing them about 1 inch apart. This spacing allows for even cooking and browning on all sides.
  4. Bake: Bake in the preheated oven for 20–25 minutes, or until the sausage balls are golden brown and fully cooked. The exterior should be firm and slightly crisp, while the inside remains moist and flavorful. You can check doneness by cutting one ball in half to ensure the sausage is fully cooked.
  5. Serve: Serve the sausage balls warm as a snack or appetizer. They pair beautifully with dipping sauces such as ranch dressing, spicy mustard, or even a creamy cheese dip. They’re perfect for parties, game day, or casual gatherings.
  6. Store Leftovers: Any leftover sausage balls can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 5–10 minutes or microwave briefly to enjoy warm again.
