Rustic Spiced Pear Galette

3️⃣ Form the Galette

  1. On a floured surface, roll the chilled dough into a round about 30 cm in diameter. Keep the edges as even as possible, but a slightly rustic shape is normal for a galette.
  2. Transfer the rolled dough to a parchment-lined baking sheet. Place the pear filling in the center, arranging the slices slightly overlapping if desired. Leave a wide border—about 4–5 cm—for folding.
  3. Fold the dough edges over the pears, working around the circle and gently overlapping sections. Press lightly to help the folds stay in place; the center should remain open so the pears can caramelize.
  4. Brush the exposed dough with egg yolk to promote a glossy, golden finish. Sprinkle granulated sugar over the crust and lightly over the pears for extra shine and subtle crunch.

4️⃣ Baking

  • Bake in a preheated 350°F oven for 35–40 minutes, or until the crust turns golden brown and the pears look soft and lightly caramelized. The juices should bubble gently in the center.

5️⃣ Serving

  • Serve warm so the pastry remains crisp and the pear filling softens beautifully.
  • For an added treat, pair with vanilla ice cream or lightly sweetened whipped cream.

The galette can also be enjoyed at room temperature, where the flavors of the spiced pears deepen even further.
