Grill the Shrimp
- Preheat your grill: Heat a grill or grill pan to medium-high so the shrimp cook quickly and develop a slight char without drying out. A properly heated surface ensures even cooking and prevents sticking.
- Season the shrimp: In a mixing bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, onion powder, cayenne pepper if you want heat, and a generous pinch of salt and black pepper. Mix until each piece is evenly coated with the seasoning blend.
- Grill the shrimp: Arrange the seasoned shrimp in a single layer on the grill. Cook for 2–3 minutes per side, or until they turn pink, opaque, and slightly firm. Avoid overcooking, as shrimp toughen quickly. Remove from heat and set aside while preparing the fried rice.
