Seared Scallops with Creamy Pesto Risotto

  • 1 cup Arborio rice
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 3–4 cups warm chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons pesto (store-bought or homemade)
  • Salt & black pepper, to taste
  • Fresh basil or parsley, for garnish
