1. Prepare the Filling
In a skillet, sauté the shrimp and garlic until the shrimp are just pink and opaque. Add the chopped spinach and cook until wilted, about 2-3 minutes. Let the mixture cool slightly before proceeding.
2. Mix the Cheese Blend
In a large bowl, combine the ricotta, shredded mozzarella, grated Parmesan, and the beaten egg. Stir in the cooked shrimp and spinach mixture. Season with salt and black pepper to taste. Mix until well combined and smooth.
3. Roll & Arrange
Take each lasagna sheet and spread an even layer of the shrimp-spinach filling on top. Roll the sheets tightly and place them seam-side down in a baking dish.
