Simple Mediterranean-Style Veggie & Protein Plates

Broccoli & Egg Plate

Ingredients:

  • Steamed broccoli
  • Soft-boiled eggs (halved)
  • Baby greens (optional)

Instructions:

  1. Steam broccoli for about 5–6 minutes until it turns bright green and can be pierced with a fork but still holds its shape.
  2. Bring water to a gentle boil, then carefully lower in eggs. Boil for exactly 6 minutes for a soft-set center. Transfer to an ice bath before peeling.
  3. Slice eggs in half and arrange on a plate alongside the broccoli. For added freshness, serve with a handful of baby greens like arugula or spinach.

Cucumber & Egg Salad Plate

Ingredients:

  • Hard-boiled eggs (sliced)
  • Sliced cucumbers
  • Lettuce leaves
  • Lemon dressing

Instructions:

  1. Layer fresh lettuce on a plate as a crisp base.
  2. Add sliced cucumbers and hard-boiled eggs on top.
  3. Drizzle with a simple lemon dressing made from lemon juice, olive oil, salt, and pepper. Serve chilled for a refreshing bite.
