Broccoli & Egg Plate
Ingredients:
- Steamed broccoli
- Soft-boiled eggs (halved)
- Baby greens (optional)
Instructions:
- Steam broccoli for about 5–6 minutes until it turns bright green and can be pierced with a fork but still holds its shape.
- Bring water to a gentle boil, then carefully lower in eggs. Boil for exactly 6 minutes for a soft-set center. Transfer to an ice bath before peeling.
- Slice eggs in half and arrange on a plate alongside the broccoli. For added freshness, serve with a handful of baby greens like arugula or spinach.
Cucumber & Egg Salad Plate
Ingredients:
- Hard-boiled eggs (sliced)
- Sliced cucumbers
- Lettuce leaves
- Lemon dressing
Instructions:
- Layer fresh lettuce on a plate as a crisp base.
- Add sliced cucumbers and hard-boiled eggs on top.
- Drizzle with a simple lemon dressing made from lemon juice, olive oil, salt, and pepper. Serve chilled for a refreshing bite.
