Sizzling Scallops with Zesty Lime Cilantro Sauce

  1. Prepare the Sauce: In a small bowl, whisk together the lime juice, lime zest, cilantro, olive oil, honey (if using), minced garlic, and a pinch of salt and pepper. Taste and adjust acidity or sweetness as desired. Set aside to allow flavors to meld.
  2. Prep the Scallops: Ensure scallops are thoroughly dried—this is key to achieving a beautiful sear. Season both sides with salt and black pepper.
