- Prepare the Salmon Bites: Preheat your oven to 400°F (200°C). Place the salmon cubes on a baking sheet lined with parchment paper or lightly greased. Drizzle the salmon with olive oil and season with salt and pepper. In a small bowl, mix the BBQ sauce and honey (or brown sugar) until well combined. Brush the BBQ mixture generously over the salmon cubes, ensuring they are evenly coated. Set aside to marinate for about 10 minutes.
- Bake the Salmon Bites: Place the salmon in the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and slightly caramelized. The salmon should be flaky and tender. Keep an eye on it to avoid overcooking, as salmon cooks quickly.
- Make the Creamy Blue Cheese Dip: While the salmon is baking, prepare the blue cheese dip. In a small bowl, combine the crumbled blue cheese, mayonnaise, sour cream, lemon juice, garlic powder, and onion powder. Stir until smooth and well combined. Season with salt and pepper to taste. If you like a chunkier dip, leave the blue cheese more crumbled; for a smoother dip, mash the blue cheese into the sauce until creamy.
- Serve: Once the salmon bites are done, remove them from the oven and let them cool slightly. Arrange the salmon bites on a serving platter and serve with the creamy blue cheese dip on the side. Garnish with chopped parsley or green onions if desired for an added touch of freshness.
