1. Prepare the Meat Mixture:
In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, pepper, and Italian seasoning. Mix gently with your hands or a spoon until just combined. Avoid overmixing to keep the meatballs tender.
2. Shape the Meatballs:
Divide the meat mixture into equal portions (about 2 tablespoons each). Flatten each portion slightly, place a cube of mozzarella in the center, and wrap the meat around it. Roll into a ball, making sure the cheese is fully sealed inside. Repeat with remaining mixture and mozzarella.
3. Sear the Meatballs:
Heat olive oil in a large skillet over medium-high heat. Add the meatballs and sear on all sides for about 5–6 minutes until golden brown. This helps lock in flavor and creates a nice crust. (If baking instead, preheat oven to 400°F / 200°C.)
