1οΈβ£ Make the Crust
- In a bowl, mix vanilla wafer crumbs, melted butter, and sugar until evenly moistened.
- Press the mixture firmly into the bottoms of a mini muffin tin or silicone molds. Use the back of a spoon or your fingers to compact the crust.
- Chill in the fridge while preparing the filling.
2οΈβ£ Make the Cheesecake Filling
- In a medium bowl, beat the softened cream cheese until smooth and fluffy.
- Add powdered sugar and vanilla extract; beat until fully combined.
- Fold in whipped topping gently until smooth and airy.
- Spoon or pipe the filling onto the chilled crusts. Smooth the tops with a spatula or spoon.
3οΈβ£ Make the Strawberry Crunch
- In a food processor, pulse freeze-dried strawberries and vanilla wafers until crumbly (not powdery).
- Transfer to a bowl and stir in melted butter until combined and slightly clumpy.
- Sprinkle generously over the cheesecake bites.
