Strawberry Crunch Cheesecake Chunks

2. Make the Strawberry Crunch:

  1. In a bowl, mix together the crushed golden Oreos and either freeze-dried strawberries or strawberry gelatin mix for flavor and color.
  2. Stir in the melted butter until the mixture is moist and crumbly. Set aside.

3. Prepare the Strawberry Sauce:

  1. In a small saucepan, combine the diced strawberries, sugar, and lemon juice.
  2. Cook over medium heat, stirring frequently, for about 5–7 minutes until the strawberries soften and the sauce thickens slightly. Remove from heat and cool completely before using.

4. Assemble the Cheesecake Chunks:

  1. Once fully chilled, lift the cheesecake out of the pan using the parchment overhang. Cut into neat squares or chunks, wiping the knife clean between slices for sharp edges.
  2. Spoon the cooled strawberry sauce over each chunk.
  3. Sprinkle each with the prepared strawberry crunch, pressing lightly to help it adhere.
  4. Drizzle with melted white chocolate in a zigzag pattern for an eye-catching finish.

5. Serve and Store:

Serve cold, garnished with extra crunch or fresh strawberries if desired. Store in an airtight container in the refrigerator for up to 4 days. These cheesecake chunks make great party tray additions or handheld dessert bars.
