Strawberry Crunch Cheesecake

Instructions

    1. Combine the crushed graham crackers and melted butter in a medium mixing bowl. Stir until all the crumbs are evenly coated and the texture resembles damp sand. This ensures the crust holds together firmly once pressed into the pan. Pour the mixture into a springform pan and press it firmly across the bottom using the back of a spoon or the bottom of a measuring cup. Make sure the crust is even and compact to provide a sturdy base for the layers. Set aside while you prepare the filling.
    2. In a separate bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until completely smooth and creamy. This step helps remove any lumps and gives the filling its signature silky texture. Once the mixture is smooth, gently fold in the whipped cream. Folding rather than stirring vigorously keeps the mixture light and airy, resulting in a soft, mousse-like consistency.
    3. Spread half of the cream mixture over the prepared crust, smoothing it into an even layer. This first layer creates a creamy base that pairs perfectly with the bright flavor of the strawberries.
    4. Arrange a generous layer of sliced fresh strawberries over the cream mixture. Try to distribute them evenly so each slice of cheesecake gets plenty of fruit. Drizzle the strawberry jam over the strawberries, allowing it to seep between the slices for extra sweetness and a vibrant burst of strawberry flavor.
