Step 1: Prepare the Strawberry Crunch Topping
- Crush the Freeze-Dried Strawberries: Place freeze-dried strawberries in a food processor or sealable plastic bag. Crush into small pieces or fine crumbs using a food processor or rolling pin.
- Mix the Topping: In a small bowl, combine the crushed strawberries, crushed golden graham cereal, and granulated sugar. Stir until evenly mixed. Set aside.
Step 2: Prepare the Cookie Dough
- Preheat the Oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 3–4 minutes).
- Add Egg and Vanilla: Beat in the egg and vanilla extract until smooth and fully incorporated.
- Add Strawberry Powder: Stir in the crushed freeze-dried strawberries until evenly distributed through the dough.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture. Stir until just combined. Fold in white chocolate chips, if using.
