Strawberry Shortcake Earthquake Cake (Creamy, Fruity, and Irresistibly Gooey)

Instructions

1. Prep the Oven and Pan

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.

2. Make the Cake Batter

  1. Prepare the cake mix according to the package directions (mixing in the eggs, oil, and water). Set aside.

3. Prepare the Cream Cheese Filling

  1. In a medium bowl, beat the softened cream cheese and butter together until smooth and fluffy.
  2. Add the powdered sugar and vanilla. Mix until creamy and lump-free. Set aside.

4. Assemble the Earthquake Cake

  1. Pour the prepared cake batter into the baking dish and smooth into an even layer.
  2. Spoon dollops of the cream cheese mixture randomly over the batter.
  3. Scatter the diced strawberries evenly across the top.
  4. Using a butter knife, swirl everything gently — don’t overmix. You want streaks and pockets of cream cheese and fruit to remain visible.
  5. Optional: Sprinkle white chocolate chips or cookie crumbles over the top for added texture.
