Instructions
1. Prep the Oven and Pan
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.
2. Make the Cake Batter
- Prepare the cake mix according to the package directions (mixing in the eggs, oil, and water). Set aside.
3. Prepare the Cream Cheese Filling
- In a medium bowl, beat the softened cream cheese and butter together until smooth and fluffy.
- Add the powdered sugar and vanilla. Mix until creamy and lump-free. Set aside.
4. Assemble the Earthquake Cake
- Pour the prepared cake batter into the baking dish and smooth into an even layer.
- Spoon dollops of the cream cheese mixture randomly over the batter.
- Scatter the diced strawberries evenly across the top.
- Using a butter knife, swirl everything gently — don’t overmix. You want streaks and pockets of cream cheese and fruit to remain visible.
- Optional: Sprinkle white chocolate chips or cookie crumbles over the top for added texture.
