Stuffed Eggplant Rolls

Step 1: Prepare the Meat Mixture

In a large bowl, combine the ground pork or chicken, chopped green onions, minced garlic, minced ginger, soy sauce, oyster sauce, black pepper, salt, and egg. Mix everything together thoroughly until well incorporated. The egg helps bind the ingredients together, while the soy and oyster sauce add depth of flavor. The garlic and ginger provide a fresh, aromatic base that will complement the eggplant perfectly.

Step 2: Slice the Eggplant

Using a vegetable peeler, slice the eggplant into thin strips, about ¼ to ½ inch wide. The thin slices will help the eggplant cook quickly and evenly while also making it easier to roll up with the meat filling. Lay the eggplant strips out flat on a clean surface, ready for stuffing.

Step 3: Fill the Eggplant Strips

Take about 1 tablespoon of the prepared meat mixture and place it at one end of each eggplant strip. Spread the mixture evenly along the strip. Be sure not to overstuff the rolls, as you want them to be able to close securely. The thin eggplant will wrap around the filling beautifully, creating a neat and compact roll.

Step 4: Roll the Eggplant Strips

Once the filling is spread out, carefully roll up each eggplant strip, securing the filling inside. The eggplant should naturally curl into a neat roll when you start from the end with the filling and roll tightly. The soft, cooked eggplant will hold the filling in place as it fries.
