1οΈβ£ Prepare the Sugar Cookie Crust
- Preheat oven to 325Β°F (160Β°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. In a separate large bowl, beat softened butter and sugar until light and fluffy.
- Mix in egg and vanilla extract, then slowly add dry ingredients. Fold in sprinkles.
- Press the cookie dough evenly into the bottom of the prepared pan. Bake for 10β12 minutes just until set (do not fully bake). Let cool while preparing the filling.
2οΈβ£ Make the Cheesecake Filling
- In a large bowl, beat cream cheese until completely smooth and creamy (about 2β3 minutes).
- Add sugar and beat until combined. Mix in sour cream and vanilla.
- Beat in eggs one at a time, mixing on low speed and scraping the bowl between each addition. Stir in the flour last, mixing just until incorporated.
