1️⃣ Prepare the Sugar Cookie Crust

  1. Preheat oven to 325Β°F (160Β°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. In a separate large bowl, beat softened butter and sugar until light and fluffy.
  3. Mix in egg and vanilla extract, then slowly add dry ingredients. Fold in sprinkles.
  4. Press the cookie dough evenly into the bottom of the prepared pan. Bake for 10–12 minutes just until set (do not fully bake). Let cool while preparing the filling.

2️⃣ Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese until completely smooth and creamy (about 2–3 minutes).
  2. Add sugar and beat until combined. Mix in sour cream and vanilla.
  3. Beat in eggs one at a time, mixing on low speed and scraping the bowl between each addition. Stir in the flour last, mixing just until incorporated.
