Taco Bell Beefy Melt Burrito Recipe

Ingredients

  • 1 ½ pounds ground beef (80/20 or leaner if preferred for a juicy, flavorful filling)
  • 1 small onion, finely diced (for savory flavor)
  • 3 cloves garlic, minced (to add depth of flavor)
  • 1 packet taco seasoning mix (for easy seasoning, or use homemade taco seasoning)
  • ½ cup water (for the taco seasoning mix)
  • 4 large flour tortillas (for wrapping the filling)
  • 1 cup shredded cheddar cheese (for a cheesy melt)
  • 1 cup shredded mozzarella cheese (for a gooey texture)
  • Optional toppings: sour cream, lettuce, tomatoes, or salsa

Instructions

  1. Cook the beef: In a large skillet, cook the ground beef over medium heat, breaking it apart with a spatula until browned and cooked through, about 7-8 minutes. Drain any excess grease, then add the diced onion and minced garlic to the pan. Sauté for 2-3 minutes, until the onion is softened and the garlic is fragrant.
  2. Season the beef: Add the taco seasoning mix and ½ cup of water to the beef mixture. Stir well to combine, and let it simmer for 5 minutes until the sauce thickens and the beef is fully coated in the seasoning. Taste and adjust seasoning if necessary.
  3. Prepare the tortillas: While the beef mixture is simmering, heat the flour tortillas in a dry skillet or microwave for about 20-30 seconds until warm and pliable. This makes them easier to fold and roll without tearing.
  4. Assemble the burritos: Lay the warmed tortillas flat on a clean surface. Spoon about ¼ of the beef mixture onto the center of each tortilla. Sprinkle with a generous amount of shredded cheddar and mozzarella cheese, making sure it’s evenly distributed.
  5. Roll the burritos: Fold in the sides of the tortillas, then roll them tightly from the bottom up to enclose the filling. Be sure to roll them snugly to keep everything inside.
  6. Toast the burritos (optional): For extra crispiness and a melty cheese center, you can heat a little oil in a skillet over medium heat and lightly toast the burritos for 2-3 minutes on each side, or until golden brown and crispy.
