Instructions
1️⃣ Prepare the Dough
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, baking soda, salt, and cornstarch. Set aside.
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together with a hand or stand mixer until light and fluffy (about 2–3 minutes).
- Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined — do not overmix!
- Fold in the chocolate chips and chopped walnuts until evenly distributed.
2️⃣ Shape & Chill
- Scoop large portions of dough (about ¼ cup each) and shape them into rough balls. For true bakery-style cookies, keep them tall and chunky instead of flat.
- Place on the prepared baking sheets, spaced at least 2 inches apart.
- Chill the dough balls in the refrigerator for 30 minutes before baking — this helps the cookies stay thick and chewy.
3️⃣ Bake the Cookies
- Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown but the centers are still slightly underbaked. They will finish setting as they cool.
- Let the cookies rest on the baking sheet for 10 minutes before transferring to a wire rack.
