The BEST Chocolate Chip Cookies (Levain Copycat!)

Instructions

1️⃣ Prepare the Dough

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cornstarch. Set aside.
  3. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together with a hand or stand mixer until light and fluffy (about 2–3 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined — do not overmix!
  6. Fold in the chocolate chips and chopped walnuts until evenly distributed.

2️⃣ Shape & Chill

  1. Scoop large portions of dough (about ¼ cup each) and shape them into rough balls. For true bakery-style cookies, keep them tall and chunky instead of flat.
  2. Place on the prepared baking sheets, spaced at least 2 inches apart.
  3. Chill the dough balls in the refrigerator for 30 minutes before baking — this helps the cookies stay thick and chewy.

3️⃣ Bake the Cookies

  1. Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown but the centers are still slightly underbaked. They will finish setting as they cool.
  2. Let the cookies rest on the baking sheet for 10 minutes before transferring to a wire rack.
