Traditional Russian Rye Bread with Caraway Seeds

👨‍🍳 Instructions

1️⃣ Prepare the Sponge:

  1. In a medium bowl, combine the rye flour, warm water, yeast, and honey or molasses.
  2. Stir until it forms a thick paste.
  3. Cover and let rest at room temperature for about 1 hour, until it becomes airy, bubbly, and fragrant.

2️⃣ Make the Dough:

  1. Transfer the sponge to a large mixing bowl.
  2. Add the remaining rye flour, bread flour, warm water, salt, caraway seeds, and vegetable oil.
  3. Stir with a wooden spoon until a sticky, thick dough forms. Expect a dense texture — this is typical for rye-based doughs.
  4. With damp hands, gently shape the dough into a rough ball in the bowl.

3️⃣ First Rise:

  1. Cover the bowl with a clean towel or plastic wrap and let rise at room temperature for 1 hour, or until slightly puffed.

4️⃣ Shape the Loaf:

  1. Turn the dough out onto a lightly floured surface. Shape it gently into a round or oval loaf without overworking.
  2. Transfer to a parchment-lined baking sheet.
  3. Sprinkle additional caraway seeds on top for flavor and texture.
