1️⃣ Prepare the Sponge:
- In a medium bowl, combine the rye flour, warm water, yeast, and honey or molasses.
- Stir until it forms a thick paste.
- Cover and let rest at room temperature for about 1 hour, until it becomes airy, bubbly, and fragrant.
2️⃣ Make the Dough:
- Transfer the sponge to a large mixing bowl.
- Add the remaining rye flour, bread flour, warm water, salt, caraway seeds, and vegetable oil.
- Stir with a wooden spoon until a sticky, thick dough forms. Expect a dense texture — this is typical for rye-based doughs.
- With damp hands, gently shape the dough into a rough ball in the bowl.
3️⃣ First Rise:
- Cover the bowl with a clean towel or plastic wrap and let rise at room temperature for 1 hour, or until slightly puffed.
4️⃣ Shape the Loaf:
- Turn the dough out onto a lightly floured surface. Shape it gently into a round or oval loaf without overworking.
- Transfer to a parchment-lined baking sheet.
- Sprinkle additional caraway seeds on top for flavor and texture.
