Ingredients
- 8 slices of thick-cut bread (sourdough, brioche, or rustic white are best)
- 8 strips thick-cut bacon
- 2 tablespoons unsalted butter, softened
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded gouda cheese (or your favorite cheese)
Instructions
- Start by cooking the bacon. In a large skillet or frying pan, cook the thick-cut bacon over medium heat until crispy, about 5-7 minutes per side. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess fat. The crispy bacon will provide a crunchy, smoky texture that contrasts beautifully with the melty cheese.
- While the bacon is cooking, prepare your bread. Spread a thin layer of softened butter on one side of each slice of bread. The butter will help the bread achieve a golden, crispy texture when it’s grilled. Be generous with the butter, but not so much that it makes the bread soggy.
- Once the bacon is done and the bread is prepped, assemble your sandwiches. Place one slice of bread, buttered-side down, on a clean surface. Layer a generous amount of shredded sharp cheddar, mozzarella, and gouda cheeses on the bread. The combination of these three cheeses will give the sandwich a rich, melty filling that’s full of flavor.
- Place two slices of crispy bacon on top of the cheese. You can break the bacon strips in half if needed to fit perfectly on the bread. Then, top with the second slice of bread, buttered-side up.
