Triple-Layer Chocolate Espresso Mousse Cake

Ingredients:

  • For the Chocolate Cake Layers (3 layers):
  • 400 g granulated sugar
  • 220 g all-purpose flour
  • 90 g unsweetened cocoa powder (preferably Dutch-process)
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 240 ml milk
  • 120 ml vegetable oil
  • 2 teaspoons vanilla extract
  • 240 ml boiling water + 1 tablespoon instant espresso (or very strong coffee)
  • For the Espresso Mousse Filling:
  • 450 g cream cheese, softened
  • 120 g powdered sugar
  • 2 teaspoons instant espresso (dissolved in 1 tablespoon hot water)
  • 1 teaspoon vanilla extract
  • 480 ml cold heavy cream
  • For the Chocolate Ganache Coating:
  • 340 g dark or semi-dark chocolate, finely chopped
  • 360 ml heavy cream
  • 2 tablespoons corn syrup (optional, for extra shine)
  • Garnish:
  • Chocolate-covered espresso beans (optional)
