: Turkey Stew with Spring Vegetables 🦃🥕🍲

👩‍🍳 Instructions

1️⃣ Prepare the Stew Base

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and sauté for 3–4 minutes until softened.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.

2️⃣ Cook the Turkey 🦃

  1. Add the diced turkey to the pot and cook until browned on all sides, about 5–7 minutes.
  2. Season with salt, pepper, and dried rosemary and thyme. Stir to coat evenly.

3️⃣ Add the Vegetables 🥕🍲

  1. Add the carrots, potatoes, green beans, and peas to the pot.
  2. Pour in the chicken or vegetable broth, and bring the mixture to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 25–30 minutes until the vegetables are tender and the turkey is cooked through.

4️⃣ Season & Serve 🍽️

  1. Adjust seasoning with more salt and pepper to taste, if needed.
  2. Garnish with fresh parsley before serving for an added burst of freshness.
