Adding the Fruits and Nuts

  1. Gently fold in the 1 cup of mixed dried fruit, making sure to evenly distribute the fruit throughout the batter. You can use a variety of dried fruits, such as raisins, currants, chopped dried apricots, or candied cherries, for a colorful and flavorful mix. If you want a bit of crunch, you can also add 1/2 cup of chopped walnuts or almonds.
  2. If desired, add 1 tablespoon of orange zest for a subtle citrus note that pairs beautifully with the sweetness of the dried fruit. This step is optional, but the orange zest adds a lovely fresh aroma to the cake.
  3. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Tap the pan gently on the counter to remove any air bubbles and ensure the batter settles evenly in the pan.
