- Prepare the Steak:
Bring the steaks to room temperature for 20–30 minutes so they cook more evenly and develop a better sear. Pat them dry if needed, then season generously with salt and freshly cracked pepper. Heat the olive oil or butter in a cast-iron skillet over medium-high heat until the surface shimmers. Add the steaks and sear for 3–4 minutes per side for medium-rare, pressing gently for even contact. Add the smashed garlic and optional thyme or rosemary, tilting the pan to baste the steaks with the melted butter as they cook. Once done, transfer the steaks to a warm plate and let them rest for 5 minutes to retain their juices before slicing. - Cook the Garlic Shrimp:
Using the same skillet, melt the butter over medium heat, allowing it to pick up the flavours left from the steak. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Add the shrimp in a single layer and season with salt, pepper, and optional chili flakes. Cook for 1–2 minutes per side, just until the shrimp turn pink and opaque. Overcooking will make them tough, so remove them promptly. Finish with fresh lemon juice and sprinkle with chopped parsley to brighten the dish. - Combine & Serve:
Slice the rested steak against the grain and arrange the pieces on a plate next to the garlic shrimp. Spoon any remaining pan sauce over both the steak and shrimp for added richness. Serve immediately with sides such as mashed potatoes, roasted vegetables, or warm garlic bread to complete the meal.
