1️⃣ Prep the Onions
- Peel and slice onions into thin rings (as thin as chips or matchstick thickness).
- Separate the rings gently and pat dry with paper towels to remove excess moisture.
2️⃣ Make the Batter
- In a bowl, whisk together flour, cornstarch, garlic powder, smoked paprika (if using), salt, and pepper.
- Add cold water gradually and mix until a smooth, slightly thick batter forms — it should coat the onion rings lightly but not drip heavily.
3️⃣ Heat the Oil
- In a deep skillet or fryer, heat oil to 350°F (175°C).
4️⃣ Fry the Onion Rings
- Dip onion rings into the batter, shaking off excess.
- Carefully lower into hot oil in small batches to avoid overcrowding.
- Fry for 2–3 minutes per batch or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain.
5️⃣ Serve
- Season immediately with a pinch of salt while hot.
- Serve with dipping sauces like ranch, spicy mayo, or marinara.
