- Preheat the oven. Set your oven to 325°F (165°C) and grease and flour a 9×13-inch baking dish to prepare it for the batter.
- Mix the wet ingredients. In a large bowl, combine the oil, sugar, and eggs. Beat together until smooth and well incorporated. This creates the base of the batter, ensuring it’s rich and moist.
- Add the dry ingredients. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, cloves, and nutmeg. Gradually add the dry ingredients to the wet mixture, stirring until the batter is smooth and thickened.
- Incorporate the fruit and mix-ins. Gently fold in the white raisins, chopped pecans, cut-up apples, coconut, and red cherries. The fruit and nuts provide texture, flavor, and moisture, making the cake extra flavorful.
- Bake the cake. Pour the batter into the prepared baking dish and spread it out evenly. Bake for 1 hour and 10 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake should be golden brown on top and firm to the touch.
- Cool and serve. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve it as-is or with a dusting of powdered sugar for an extra touch of sweetness.
