Virginia’s Fresh Apple Cake (A Family Tradition)

Instructions

  1. Preheat the oven. Set your oven to 325°F (165°C) and grease and flour a 9×13-inch baking dish to prepare it for the batter.
  2. Mix the wet ingredients. In a large bowl, combine the oil, sugar, and eggs. Beat together until smooth and well incorporated. This creates the base of the batter, ensuring it’s rich and moist.
  3. Add the dry ingredients. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, cloves, and nutmeg. Gradually add the dry ingredients to the wet mixture, stirring until the batter is smooth and thickened.
  4. Incorporate the fruit and mix-ins. Gently fold in the white raisins, chopped pecans, cut-up apples, coconut, and red cherries. The fruit and nuts provide texture, flavor, and moisture, making the cake extra flavorful.
  5. Bake the cake. Pour the batter into the prepared baking dish and spread it out evenly. Bake for 1 hour and 10 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake should be golden brown on top and firm to the touch.
  6. Cool and serve. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve it as-is or with a dusting of powdered sugar for an extra touch of sweetness.
