✨ 1. Brownie Base
- Preheat the oven to 160°C (325°F).A slightly lower temperature helps the brownie bake evenly without drying out.
- Grease a 23 cm (9 inch) springform pan and line the bottom with parchment paper.This makes it easier to release the cake later while keeping the base intact.
- In a bowl, cream the melted butter and sugar until smooth.Whisk until the mixture looks glossy and slightly thickened; this helps give the brownie a tender texture.
- Add the eggs one at a time, then stir in the vanilla.Mix just until each egg disappears into the batter to avoid incorporating too much air.
- Add the cocoa, flour, and salt and mix just until combined (do not overmix).Stop as soon as no dry streaks remain to keep the brownie dense and fudgy rather than cakey.
- Pour the batter into the pan and smooth the top.Use a spatula to gently nudge the batter into the edges for an even layer.
- Bake for 20–25 minutes (it should be set but still slightly soft in the center).The edges will look firm and the center will no longer appear liquid, but a toothpick may still show a few moist crumbs.
- Remove from the oven and let cool slightly.The brownie should still be warm but not hot when you pour the cheesecake layer over it; this helps the layers cling together while baking.
