- Melt the white chocolate. In a microwave-safe bowl, melt the white chocolate chips by heating them in 30-second intervals, stirring well between each. Continue heating until the chocolate is smooth and fully melted. Be careful not to overheat, as white chocolate can burn easily.
- Add vanilla and salt. Stir in the vanilla extract and a pinch of sea salt into the melted white chocolate. The vanilla adds a warm, aromatic note, while the salt balances the sweetness of the chocolate.
- Mix in the cranberries and pecans. Add the dried cranberries and pecan halves to the bowl, stirring gently to coat them evenly with the white chocolate mixture. Make sure everything is fully coated, but be careful not to break up the pecans too much.
- Form the clusters. Drop spoonfuls of the white chocolate mixture onto a parchment-lined baking sheet. You can make the clusters as big or small as you like, but aim for bite-sized portions. Leave space between each cluster to ensure they don’t stick together.
- Set the clusters. Allow the clusters to cool at room temperature, or place them in the refrigerator for quicker setting. Once firm, the clusters will be ready to enjoy!
