White Chocolate Raspberry Loaf Cake

  • Preheat & Prep

    • Preheat oven to 170°C (340°F).

    • Grease and line a loaf pan (8×4 or 9×5 inches) with parchment paper.

  • Mix Wet Ingredients

    • In a large bowl, whisk the melted butter and sugar until smooth.

    • Add eggs and vanilla extract; mix until creamy.

    • Stir in the milk until combined.

  • Combine Dry & Wet

    • In a separate bowl, whisk together the flour, baking powder, and salt.

    • Gradually fold dry ingredients into the wet mixture to create a thick batter — don’t overmix.

  • Add the Mix-ins

    • Fold in the white chocolate chips.

    • Gently fold in raspberries that have been lightly coated in flour (to prevent sinking).

  • Bake
