White Christmas Mojito

Ingredients

For the Rim:

  • 1 tablespoon lime juice
  • 2 tablespoons shredded coconut (sweetened or unsweetened, based on preference)

For the Mojito:

  • 10-12 fresh mint leaves
  • 1 tablespoon granulated sugar (adjust to taste)
  • 2 oz white rum
  • 1 oz coconut milk (or coconut cream for a richer texture)
  • 1 oz fresh lime juice (about 1 lime)
  • Club soda or sparkling water (to top off)
  • Ice
  • Lime wedges, for garnish
  • Mint sprigs, for garnish

Instructions

  1. Start by preparing the rim of the glass. Pour the lime juice onto a small plate. On another plate, spread the shredded coconut evenly. Dip the rim of your glass first into the lime juice, and then gently into the coconut, coating it evenly. This will give the mojito a festive, tropical flair and add extra flavor with every sip!
  2. In a separate glass or cocktail shaker, add the fresh mint leaves and granulated sugar. Muddle the mint and sugar together gently using a muddler or the back of a spoon. This will release the oils from the mint leaves, which are key to adding that refreshing minty flavor to the mojito. Be careful not to over-muddle, as this can cause bitterness from the mint stems.
  3. Once the mint is muddled, add the white rum, coconut milk (or coconut cream), and fresh lime juice to the glass or shaker. Stir or shake vigorously to combine all the ingredients. The coconut milk adds a creamy texture and a sweet, tropical flavor that perfectly complements the mint and lime.
  4. Fill your rimmed glass with ice, then pour the mojito mixture over the ice. Top the drink with club soda or sparkling water for a fizzy, refreshing finish. Stir gently to combine everything.
