1️⃣ Cook the Orzo
- Bring a pot of salted water to a boil. Cook the orzo according to package directions until al dente.
- Drain, rinse with cold water to stop cooking, and set aside.
2️⃣ Cook the Chicken
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add diced chicken breast, garlic powder, salt, black pepper, and oregano.
- Cook for 5–7 minutes, stirring occasionally, until chicken is browned and cooked through. Transfer to a plate.
3️⃣ Sauté the Vegetables
- In the same skillet, add the remaining tablespoon of olive oil.
- Add chopped zucchini, red bell pepper, and broccoli florets. Sauté for 5–6 minutes, until vegetables are tender-crisp.
