Zesty Lemon Chicken Orzo Skillet 🍋🍗🥦

👩‍🍳 Instructions

1️⃣ Cook the Orzo

  • Bring a pot of salted water to a boil. Cook the orzo according to package directions until al dente.
  • Drain, rinse with cold water to stop cooking, and set aside.

2️⃣ Cook the Chicken

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Add diced chicken breast, garlic powder, salt, black pepper, and oregano.
  • Cook for 5–7 minutes, stirring occasionally, until chicken is browned and cooked through. Transfer to a plate.

3️⃣ Sauté the Vegetables

  • In the same skillet, add the remaining tablespoon of olive oil.
  • Add chopped zucchini, red bell pepper, and broccoli florets. Sauté for 5–6 minutes, until vegetables are tender-crisp.
