🍯 Russian Honey Cake (Medovik) – A Sweet Slice of Tradition

👩‍🍳 Instructions

1. Prepare the Dough:

  1. Set up a double boiler with a heatproof bowl over simmering water. Add the butter, honey, and sugar. Stir until everything is melted and golden.
  2. Add the eggs one at a time, whisking quickly to avoid curdling.
  3. Stir in the baking powder—expect the mixture to bubble and deepen in color.
  4. Remove from heat. Gradually fold in the flour using a spatula until a soft, sticky dough forms.

2. Shape and Bake the Layers:

  1. Divide the dough into 7–8 equal portions. Keep them covered to avoid drying out.
  2. Roll each piece into a thin circle (~20 cm diameter) on parchment paper.
  3. Bake at 175°C (350°F) for 5–6 minutes, or until edges turn golden. Watch carefully—they bake fast!
  4. Cool the layers completely. Optionally, stack them and place a tray on top to flatten slightly.
