🥕🍰 Cream Cheese Frosted Moist Carrot Cake

👩‍🍳 Instructions

1. Make the Cake:

  1. Preheat oven to 350°F (180°C). Grease and line three 8-inch (20 cm) round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the brown sugar, granulated sugar, oil, eggs, and vanilla extract until smooth and combined.
  4. Fold in the grated carrots, chopped nuts, and crushed pineapple (if using).
  5. Add the dry ingredients to the wet mixture and gently fold until just combined. Do not overmix.
  6. Divide the batter evenly among the prepared pans and smooth the tops.
  7. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
