1. Make the Cake:
- Preheat oven to 350°F (180°C). Grease and line three 8-inch (20 cm) round cake pans with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together the brown sugar, granulated sugar, oil, eggs, and vanilla extract until smooth and combined.
- Fold in the grated carrots, chopped nuts, and crushed pineapple (if using).
- Add the dry ingredients to the wet mixture and gently fold until just combined. Do not overmix.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
