Preheat your oven to 375°F (190°C). While the oven is heating, take the refrigerated biscuit dough and separate the biscuits. Flatten each biscuit slightly with your hands or a rolling pin to form a larger circle. Place about 1-2 tablespoons of the cooked beef mixture in the center of each biscuit, then top with a small handful of shredded cheddar cheese. Fold the dough around the filling to create a ball, pinching the edges to seal tightly. Place each bomb seam-side down on a baking sheet lined with parchment paper.
Prepare the garlic parmesan topping: In a small bowl, mix the melted butter, grated parmesan cheese, and dried parsley. Brush the tops of each cheeseburger bomb with the garlic butter mixture. This will give them a beautiful golden color and a delicious garlic parmesan flavor as they bake.
Bake the bombs: Bake the cheeseburger bombs in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through. The dough should be puffed and slightly crispy, and the cheese inside will be melted and gooey.
