Ingredients
For the Chicken:
- 🍗 2 boneless chicken breasts
- 🧂 1 tsp dried oregano
- 🧄 2 garlic cloves, minced
- 🍋 Juice of 1/2 lemon
- 🛢️ 2 tbsp olive oil (divided)
- 🍚 1 cup cooked basmati or jasmine rice
For the Bowl:
- 🥒 1/2 cucumber, chopped
- 🥕 1 small carrot, sliced
- 🌶️ 1/2 red bell pepper, sliced
- 🥔 1 small potato, diced and cooked
- 🫒 1/3 cup Kalamata olives
- 🧆 1/2 cup canned chickpeas, rinsed
- 🌿 2 tbsp fresh dill, chopped
- 🧂 Salt & black pepper, to taste
For the Tzatziki-Style Sauce:
- 🥄 1/2 cup Greek yogurt
- 🥒 1/4 cucumber, grated and drained
- 🧄 1 garlic clove, finely minced
- 🍋 1 tsp lemon juice
- 🌿 1 tbsp dill or mint, chopped
