Ingredients
For the Chicken Skewers
- 1½ lbs boneless, skinless chicken breasts or thighs, cut into 1½-inch chunks
- 1 red bell pepper, cut into 1½-inch pieces
- 1 yellow bell pepper, cut into 1½-inch pieces
- 1½ cups fresh pineapple chunks
- 1 tbsp olive oil
- Salt and pepper, to taste
- Wooden or metal skewers (soaked in water if wooden)
For the Tikki Tikki Sauce
- ½ cup soy sauce (low sodium)
- ¼ cup honey or brown sugar
- ¼ cup pineapple juice
- 2 tbsp ketchup
- 1 tbsp rice vinegar or apple cider vinegar
- 2 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh grated ginger (or ½ tsp ground ginger)
- 1 tsp sriracha or chili flakes (optional for heat)
- 1 tbsp cornstarch + 2 tbsp water (for thickening)
