Fried Taters with Onion

  • Potatoes (for frying into “fried taters”)
  • Onion (to cook with the taters)

Cornbread and Onion on the Side

  • Cornbread
  • A big sweet onion (served as a quarter alongside the plate)

With just these few ingredients, you’ve got everything you need for a full Appalachian-style supper: a pot of beans that’s been simmered and reheated over several days with hog jowl bacon, a skillet of fried taters with onion in them, and cornbread with a crisp wedge of sweet onion to tie it all together.
