Artichoke Casserole – A Simple and Delicious Substitute for Stuffed Artichokes

Instructions

Step 1: Prepare the Artichokes

If you’re using canned artichokes, drain them and cut them into quarters. If you’re using frozen artichokes, boil and drain them. Lay the quartered artichokes in the bottom of a casserole dish. Squeeze fresh lemon juice over the top to add a bright, zesty flavor to the artichokes. Drizzle the olive oil over the artichokes to start the base of the casserole.

Step 2: Cook the Garlic and Anchovies

In a small pan, melt the butter along with a little olive oil over medium heat until the mixture becomes foamy. Add the chopped garlic and cook for 1-2 minutes until fragrant. If you’re using anchovy fillets, add them to the pan as well. Let them cook and melt down in the butter and oil, stirring occasionally until the anchovies dissolve and the garlic becomes golden and aromatic.
