Ingredients
For the Meatloaf Mixture:
- 2 pounds ground beef (80/20 for best flavor and moisture)
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 slices cooked bacon, chopped
- 1 cup shredded cheddar cheese (or your favorite cheese)
For the Topping:
- 1/2 cup ketchup (or BBQ sauce for a different flavor)
- 2 tablespoons brown sugar
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, garlic powder, onion powder, dried oregano, salt, and black pepper. Use your hands or a spoon to mix the ingredients together until fully combined. This forms the base of your meatloaf.
- Once the mixture is ready, gently fold in the chopped cooked bacon and shredded cheddar cheese. Be careful not to overmix, as this can make the meatloaf dense. The bacon will add a smoky flavor, and the cheese will create pockets of melty goodness throughout the meatloaf.
- Transfer the meat mixture into the prepared loaf pan and gently press it into an even layer. Smooth the top to ensure it cooks evenly. If you prefer a crispy exterior, you can form the meatloaf into a free-form shape on a baking sheet, but using a pan will help keep it together.
- In a small bowl, mix together the ketchup (or BBQ sauce) and brown sugar. Stir until the brown sugar dissolves into the sauce, creating a sweet and tangy glaze for the meatloaf.
- Spread the glaze evenly over the top of the meatloaf, covering it completely. This will give the meatloaf a nice, caramelized finish as it bakes.
